- Mix wet and dry ingredients separately before blending together.
- Take egg(s) out of refrigerator, let warm to room temperature before adding to wet ingredients.
- Separate egg white(s) from yolk(s) before adding yolk(s) to wet ingredients.
- Do not over-stir ingredients ... over-stirring can stiffen batter, making waffles tough and rubbery.
- Whip egg white(s) until stiff then fold lightly into the blended batter just before cooking.
