Making light, fluffy waffles

  1. Mix wet and dry ingredients separately before blending together.
  2. Take egg(s) out of refrigerator, let warm to room temperature before adding to wet ingredients.
  3. Separate egg white(s) from yolk(s) before adding yolk(s) to wet ingredients.
  4. Do not over-stir ingredients ... over-stirring can stiffen batter, making waffles tough and rubbery.
  5. Whip egg white(s) until stiff then fold lightly into the blended batter just before cooking.
